Twenty-Four-Hour Bean Salad

Recipe Type: Side Dish
 
Ingredients:
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1 cup vinegar
  • 1/2 cup salad oil
  • 1 Alabama bell pepper, finely chopped
  • 4 stalks celery, finely chopped
  • 1 Alabama onion, finely chopped
  • 1 small jar diced pimento
  • 1 can petite English peas, drained
  • 1 can French-style green beans, drained
Directions:

To make the sauce, combine salt, sugar, vinegar and salad oil, mixing well. Mix all ingredients with sauce and let set in the refrigerator overnight. Stir the mixture several times. (Note: This may be made several days ahead; it seems to get better after time.)
